Creamy Chicken Breast with Spinach & Sun Dried Tomatoes

I made this chicken recipe the other night. It’s super easy and quick with minimal prep time and is perfect for a romantic night in with bae. Here’s what you’ll need:

– 1-1 1 1 1/2 lbs organic boneless & skinless chicken breast
– 2 tbsp olive oil
-1/2 cup sun dried tomatoes
-1 cup organic spinach (chopped)
-1/2 cup chicken broth
-1 cup half & half
-1 tsp garlic powder
-1 tsp Italian seasoning
-1 cup parmesan cheese
-1/2 cup white wine

There’s really only two major steps involved in this recipe: the cooking of the chicken and the making of the sauce. In a large skillet, pour in the olive oil and add the chicken, letting it cook on medium to low heat for about 20 minutes, 10 on each side. While the chicken is cooking, you can make the creamy garlic and herb sauce. In a bowl, add the half and half, chicken broth, garlic powder, Italian seasoning, parmesan cheese (I prefer shaved parm because I think the flavor is better), and white wine. Whisk over medium heat until it begins to thicken, which should take about 15-20 minutes. Add the sun dried tomatoes and the spinach, and let it simmer for a few more minutes. Finally, add the sauce to the cooked chicken and your entree is ready to serve! Add some kind of vegetable on the side like cooked asparagus or zucchini complete with a glass of wine!
