Greek Salmon Bowl

I posted this recipe on Instagram a few days ago and I’m not gonna lie… it’s so good it deserves to live on the blog forever haha. Some of you already made this and y’all loved it too! Tag me so I can see how it turns out!!

Salmon: Roast at 400 degrees for 10 minutes. I seasoned with lemon pepper, salt, and sliced lemon. I also roasted some veggies on the same pan for same amount of time. I like asparagus but you can really use whatever veggie you like best! 

Bowl/toppings:

  • Basmati rice with chives 
  • Arugula 
  • Grape tomatoes 
  • Feta cheese 
  • Avocado
  • Cucumber 
  • Red onion 
  • Plain hummus 
  • Kalamata olives (if you like) 
  • Roasted asparagus 

Dressing:

  • Juice of 1/2 lemon 
  • 1 large clove garlic 
  • 1/2 cup olive oil 
  • 1/2 cup white wine vinegar 
  • 1 tsp honey 
  • Oregano, salt, and pepper
