Italian Tortellini Soup

 

I had so much fun having my parents in town this weekend! One of our favorite things to do together is cook and we did a ton of it over the last few days. My favorite thing we made is this Italian Tortellini Soup. If you try this recipe tag me so I can see it!

Ingredients:

  • 1 lb ground Italian turkey or chicken sausage
  • 1/2 white onion, chopped
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 2 crushed cloves garlic
  • 1 tbs Italian seasoning
  • 2 tbs fennel seed
  • 8 cups chicken bone broth
  • 1 can small white beans
  • 2 cups kale, chopped
  • 2 cups dired tortellini
  • Fresh parsley
  • Parmesan cheese
  • Salt and pepper to taste

Instructions:

  1. Sauté onion, carrots, celery, and garlic in olive oil or avocado oil. Add Italian sausage until cooked through
  2. Add chicken broth, white beans, fennel seed, and Italian seasoning
  3. Simmer for 1 hour (or longer if you can – the longer you simmer the better the flavor!)
  4. 10 minutes prior to serving add tortellini and bring to a boil to cook through
  5. Serve with fresh parmesan and chopped parsley
