You guys, I never really appreciated banana pudding until I moved to the South but it is one of my favorite desserts. Especially in the summer! This is a semi-healthified version with less fat and sugar, but it tastes just as good as a regular banana pudding recipe.
Ingredients:
- 1/2 (4 oz) block cream cheese
- 2/3 cup heavy whipping cream
- 1 small package instant vanilla pudding (you can also use sugar-free pudding to cut sugar in half, it tastes the exact same and this is what I would do for my type 1 diabetic brother!)
- 1 small package instant banana pudding
- 3 cups milk
- 2 tsp vanilla extract
- 1 (11 oz) box Nilla Wafers
- 3 bananas
Instructions:
- In a large bowl, beat the whipping cream with an electric mixer on medium speed until smooth and fluffy
- Add in cream cheese
- Mix until combined well
- Mix in pudding mixes, milk, and vanilla extract
- To layer: place 1/3 of the vanilla wafers in a layer on the bottom of the dish
- Add a layer of sliced bananas
- Pour 1/3 of the pudding mixture on top to cover the bananas
- Repeat the layering process to more times
- Cover with plastic wrap and refrigerate for 1-2 hours before serving to thicken the pudding and soften wafers
- Top with whipped cream to serve
