Banana Pudding

You guys, I never really appreciated banana pudding until I moved to the South but it is one of my favorite desserts. Especially in the summer! This is a semi-healthified version with less fat and sugar, but it tastes just as good as a regular banana pudding recipe.

Ingredients:

  • 1/2 (4 oz) block cream cheese
  • 2/3 cup heavy whipping cream
  • 1 small package instant vanilla pudding (you can also use sugar-free pudding to cut sugar in half, it tastes the exact same and this is what I would do for my type 1 diabetic brother!)
  • 1 small package instant banana pudding
  • 3 cups milk
  • 2 tsp vanilla extract
  • 1 (11 oz) box Nilla Wafers
  • 3 bananas

Instructions:

  1. In a large bowl, beat the whipping cream with an electric mixer on medium speed until smooth and fluffy
  2. Add in cream cheese
  3. Mix until combined well
  4. Mix in pudding mixes, milk, and vanilla extract
  5. To layer: place 1/3 of the vanilla wafers in a layer on the bottom of the dish
  6. Add a layer of sliced bananas
  7. Pour 1/3 of the pudding mixture on top to cover the bananas
  8. Repeat the layering process to more times
  9. Cover with plastic wrap and refrigerate for 1-2 hours before serving to thicken the pudding and soften wafers
  10. Top with whipped cream to serve
